Whole pork belly slab — the format Cantonese siu yuk masters and Italian porchetta cooks both prefer. Buying whole gives you the freedom to score the skin for crackling, butterfly and stuff for porchetta, or cube down for braising and stews.

Pork belly sits at the bottom of the rib cage and combines lean meat with layers of fat that render into rich, succulent texture during slow cooking.

Sourced from welfare-standard farms, butchered in our facility, vacuum-sealed.
