Whole pork belly slab — the format Cantonese siu yuk masters and Italian porchetta cooks both prefer. Buying whole gives you the freedom to score the skin for crackling, butterfly and stuff for porchetta, or cube down for braising and stews.
Pork belly sits at the bottom of the rib cage and combines lean meat with layers of fat that render into rich, succulent texture during slow cooking.
Sourced from welfare-standard farms, butchered in our facility, vacuum-sealed.

I used the pork belly slab to cook roast pork, and it was a hit! It was not too fat, the meat came out tender, and there was a good crackling on top.
Not yet try but looks ok.
I like it not very fat. Meat is fresh.
