Product Information
Iberico pork — the Spanish heritage breed (Pata Negra) that produces the world's most famous cured ham (jamón Ibérico) and the most prized fresh pork outside Japan.
The collar (called pluma or secreto-adjacent cut) carries the marbling that makes Iberico unmistakable: rich, nutty, almost beef-like in depth, with melting fat that renders into the meat.
Singapore's premium pork eaters know Iberico as the cut that justifies a special dinner. Sourced from Spanish farms maintaining the Pata Negra tradition.
Why This Cut?
• Iberico Pata Negra — the world's most prized fresh pork breed
• Nutty, almost beef-like depth that no other pork breed can match
• Restaurant-grade Iberico at home — the cut Spanish chefs reach for
How To Serve?
• Pan-sear to medium (slight pink centre), serve with chimichurri or salsa verde
• Slice thin for Iberico carpaccio with shaved manchego and rocket

Cooking Methods
1. Cast-Iron Pan-Sear & Butter Baste (The Steakhouse Method)
Because the collar is shaped and marbled just like a beef ribeye, treating it like a premium steak yields an unbelievable crust and a meltingly tender center.
2. Air Fryer (For the Perfect Crispy Edge)
The intense circulating heat of an air fryer is uniquely suited for pork collar. It acts like a mini convection oven, roasting the meat while rapidly rendering and crisping up the fatty edges.
3. High-Heat Flash Grilling (The BBQ / Char Siew Style)
If your collar chops are sliced slightly thinner (around 1cm to 1.5cm thick), they are absolutely perfect for high-heat grilling on an outdoor BBQ or indoor griddle pan, especially if marinated in a sweet, sticky glaze.

I pan seared it it was delicious with very good marbling
First time trying out Iberico Pork Collar Chop. I am surprised by how tender the pork is. I pan fry it on the stove to seal the juice inside. Since the cut is not thick cooking time is about 10 minutes. Definitely will order it again.
Pork chop is marbled and juicy
I cooked it seasoned like a steak. 2 pieces for my family of 4, they love it!
