Kopitiam-Style Chicken Chop at Home: Crispy in the Air Fryer, with Black Pepper or Mushroom Sauce

Crispy skin, juicy leg meat and a puddle of black pepper or mushroom sauce, with fries and coleslaw on the side: the kopitiam western stall chicken chop is a Singapore classic. The questions are always the same. How long does it take in the air fryer, and how do you make the sauce? Here's how to make it at home in about 15 minutes, in an air fryer or a pan, with both classic sauces and one sweet-and-spicy twist.

Quick answer

Air fry a thawed 220g boneless chicken chop skin-side down at 200°C for 8 minutes. Flip it and cook skin-side up for 6–8 minutes, until the thickest part reads 75°C and the skin is crisp. For sweet marinades like teriyaki or garlic soy, use 180°C and add 2–3 minutes.

Air fryer chicken chop: time and temperature

Chop Temperature Time Notes
Savoury marinades (Signature Soy, Cajun, Smokey BBQ) 200°C 8 min skin-side down, then 6–8 min skin-side up Crispiest skin
Sweet marinades (Japanese Teriyaki, Japanese Garlic Soy) 180°C 9 min, then 7–9 min Lower heat stops the sugar burning
Straight from frozen 180°C 20–24 min, flipping halfway Works, but the skin won't be as crisp
  • Preheat the air fryer for 3 minutes.
  • Pat the skin dry and give it a light spray of oil.
  • Cook in a single layer. Crowded chops steam instead of crisping.
  • Check the thickest part: 75°C means it's done. Rest for 3 minutes before slicing.

Pan-fried chicken chop (crispiest skin)

  1. Pat the chop dry. Lay it skin-side down in a cold non-stick or cast-iron pan with 1 tsp oil.
  2. Turn the heat to medium. Press it flat with a spatula for the first minute, then cook for 7–8 minutes, until the skin is deep golden and the fat has rendered.
  3. Flip and cook for 4–5 minutes more. Cover the pan for the last 2 minutes if the chop is thick.
  4. Check for 75°C, rest for 3 minutes, then slice.

Starting in a cold pan lets the fat render slowly, which is what makes the skin shatter. For teriyaki or garlic soy marinades, keep the heat at medium-low so the sugars don't burn.

Kopitiam-style black pepper sauce (serves 2)

  • 15g butter
  • ½ small onion, finely chopped
  • 2 garlic cloves, minced
  • 1½ tsp coarsely cracked black pepper
  • 2 tbsp oyster sauce
  • 1 tbsp tomato ketchup
  • 1 tsp Worcestershire sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 150ml water or chicken stock
  • 1 tsp cornflour mixed with 1 tbsp water
  1. Melt the butter and soften the onion for 2–3 minutes.
  2. Add the garlic and pepper and stir for 30 seconds, until fragrant.
  3. Add the oyster sauce, ketchup, Worcestershire, dark soy, sugar and water. Simmer for 2 minutes.
  4. Stir in the cornflour mix and simmer until glossy. Taste: add more pepper for heat, or a pinch more sugar to round it out.

Creamy mushroom sauce (serves 2)

  • 15g butter
  • ½ small onion, finely chopped
  • 150g button mushrooms, sliced
  • 1 tbsp plain flour
  • 100ml chicken stock
  • 100ml cooking cream or milk
  • ½ tsp black pepper, a pinch of sugar, and salt to taste
  1. Melt the butter and cook the onion for 2 minutes.
  2. Add the mushrooms and cook for 4–5 minutes, until browned.
  3. Stir in the flour for 1 minute, then add the stock a little at a time, followed by the cream.
  4. Simmer for 2–3 minutes, until it coats a spoon. Season with pepper, sugar and salt.

A sweet-and-spicy twist: hot honey glaze

Hot honey is simply honey warmed with chilli, and it's very good on crispy chicken skin.

  • 3 tbsp honey
  • 1–2 tsp chilli flakes, or 1 tsp sambal
  • 1 tsp rice vinegar or apple cider vinegar
  • A pinch of salt

Warm everything together for 1 minute. Brush it over the skin in the last 2 minutes of cooking; any earlier and the honey burns. It's best on the Cajun or signature soy chops.

Which flavour goes with which sauce

Chicken chop flavour Serve it with
Signature soy Black pepper sauce, or the hot honey glaze
Smokey BBQ Coleslaw and fries; it doesn't need a sauce
Cajun Mushroom sauce, or the hot honey glaze
Japanese teriyaki Over rice, with sesame seeds and spring onion
Japanese garlic soy Mushroom sauce and garlic rice

The full kopitiam plate in 20 minutes

Put fries or wedges in the air fryer first. Cook the chop in a pan while they crisp, and make the sauce in a small pot alongside. Coleslaw and baked beans complete the plate.

Frequently asked questions

Can I air fry chicken chop from frozen?

Yes. Cook it at 180°C for 20–24 minutes, flipping halfway, until the thickest part reads 75°C. Thawing it in the fridge overnight gives crisper skin.

Why isn't my air fryer chicken skin crispy?

Usually the skin was wet, the basket was crowded, or the chop spent the whole time skin-side down. Pat it dry, spray the skin with a little oil, cook in a single layer, and finish skin-side up.

What temperature should chicken chop be cooked to?

75°C in the thickest part. The juices should run clear, with no pink near the bone line.

How many calories are in an air fryer chicken chop?

A 220g skin-on boneless chicken leg is roughly 450–500 kcal before sauce, and air frying lets some of the fat render out. Black pepper sauce adds about 70–90 kcal per serving.

Should I use chicken thigh or breast for chicken chop?

Use the whole leg (thigh and drumstick, deboned). It stays juicy at 75°C, while breast dries out in the air fryer.
